For when you need a smile!
It's been one of those weeks, with lots of intentions and little outcome in the creativity department. Mina is showing signs of giving up her nap (NO!!!) and this means interrupted sessions in the studio...
I did make this plush mushroom as part of a christmas package from a special mom to her little boys.
And as most of my family and friends know...i'm not a cook (gasp!), but I married a man who enjoys to!
So, it was a little entertaining, when last weekend I was bitten by the baking bug and whipped up a batch of spice mini-cakes...
Here is the recipe:
For 8 inch or 12 cupcake pan...
Preheat oven at 375 degrees
Sift:
1 3/4 cup cake flour
1/2 tsp salt
1 cup sugar
Add:
2 eggs
1/2 cup plus 2 1/2 tsp milk
1/2 cup butter softened
Whip for 1 minute at low speed. Scrape bowl. Whip again at slightly higher speed for 1 1/2 minutes.
Fold in:
1 1/2 double-acting baking powder
1 tsp vanilla
1/2 tsp cloves
1 tablespoon cinnamon
Whip for 30 seconds on first speed. Pour batter into pan and bake 20 minutes.
Perfect with tea or coffee...Enjoy!
